Also, made the Spam Sundubu Jjigae this morning with a few variations: I chose jalapeno Spam (wow!); substituted extra firm tofu because I couldn't find silken tofu; and in my haste used gochujang paste instead of gochugaru flakes (oops). Oh my heavens! It might not be exactly right and I look forward to making it again according to the recipe, but the flavors in this dish are absolutely amazing. I served it to 3 teenage boys-- one dislikes spicy food but will eat what his mom (me) makes; one is cultural-food naive but is always willing to try anything I make; and one is my Korean-food soulmate, I think -- they all gobbled it up. This turned out to be a savory and satisfying meal. Thank you for the tips!

Anticipating the intrigue of your First Short Read very much.
Thank you for the Jjigae recipe. From adolescence onward, the Spam varieties (there are a few now and my fav is turkey), the great thing for a safe meat like food source if camping/hiking and can mix with a lot of dried trail foods.And not heavy.
However, may try with a sort of variant; canned corned mutton (sources from Aus and NZ), used a lot by Pacifika people and maybe in Philippines as a sort of fusion meat source into local recipes. Lasts in the tin for decades as long as it doesn't rust and not exposed to super high temp. I bought some during pandemic times and just finishing last tin well after Use By Date.And no probs at all.
It is also known as Bully Beef in places.

And, the homophone of Martial and Marshall in English. Different etymology, but an old French Marshall and a modern US Marshall could both be charged with enforcing Martial Law.

It would be great to make Spam Sundubu Jjigae when camping. Many Koreans love camping and they make jjigae with Spam or other canned food when camping.

For first time in a while keen to see a movie in a picture theatre (a bit of a family story about old school movie theatres).
Does remind me of a Dr Who (BCC) Series 6 Episodes 5 & 6, The Rebel Flesh and The Almost People. A clever and sad replicant theme. Is the Doctor well known in Korea ?
Also a bit of Logan’s Run and Bladerunner. A bit old now, but worth a look if you are not familiar.
Mine even more old school with 60s style phone handle and key pad on the body. Actually for the day quite a good range, esp given there were few cell towers. Had a large like 18 " antenna and there was a car boost antenna system, if I recall..
Will have to tell my IBM Reel to Reel computer stories from 1960s someday.
And have seen a few more Mickey 17 promos; seems a bit of humour associated.
Have a date set with friend to see soon. We have recently seen a movie of a National Theatre UK production of The Importance of Being Earnest by Oscar. While vieweing time long, there was an intermission fof food, fluid and biological breaks and a chat. Good production, but gives a bit to the difference between plays and movies.
Maybe a few line changes, and maybe a bit of campy ambiguity at the end which fitted in quite well.
Have finally made your jjigae recipe, but actually used a Spam turkey variety ( maybe a been leaner in fat and salt) as i took to my mum.

Korean Democratic Crisis has sort of disappeared off our local news radar, and replaced by Donald Duck and Elon the Acolyte, and the New US Narcissists, who seem hell bent on a self destruction for the US and many others.

Sounds like you are a Big Ari Fan, like me.
But a lot of great cooking does not need to be recipe exact. The origins of most home food was dependent on what you had in the larder or in store.
So relax and go with what you have got.

Currently living in a post major cyclone zone and panic buying has decimated some of supermarket shelves and thus our options.
And am saving a lot of Ari's recipes for a road trip mid year (best time to travel in OZ), which will be good cost wise and heath wise.
